Morphologic and chemical characterizations of some salep orchids

Salep orchids have been used as a food for centuries without cultivating but, mainly harvesting from nature. After powdering, their tubers are utilized hot beverage and in ice-cream industry stabilizer. Due to importance industry, it is important characterize the morphology chemistry of salep orchids. In this study, was aimed determine some morphological (fresh weight, dry weight matter ratio number required 1 kg powder) chemical (glucomannan, starch, protein, moisture, ash, nitrogen, phosphorus, calcium, magnesium, potassium, iron, copper, manganese zinc contents glucomannan/starch tubers) properties 10 orchid species 6 genus namely, Anacamptis pyramidalis, Dactylorhiza romana, Himantoglossum caprinum, comperianum, Ophrys apifera, mammosa, Orchis coriophora, morio, tridendata, Serapias vomeracea grown nature Black Sea Region Türkiye. Such kinds data first can be beneficial utilizing researched industry.
